Healthy, Easy, Tastes Good, & Helps with Meal Prep!
Just got Carrie’s cookbook a couple of days ago, and I had all the ingredients for the Teriyaki Chicken and Rice. It was easy to put together, easy cleanup, and tasted delicious! I intend to cook through this entire book because all the recipes sound good and the ingredient list seems manageable. I like knowing these recipes hold up to meal prep and can be tailored, if possible, to gluten or dairy free, as well as, vegetarian or vegan! The book has some great sections aside from the recipes like Basics and Staples and Instant Pot Cooking Time Charts. All in all, I feel like this is a well rounded cookbook that will help you create healthy and tasty meals using your Instant Pot.

    Delicious recipes
Easy to make, delicious recipes. I use my instant pot all the time and this is my go-to cookbook

Recipes work, but not what they say they are.
On one hand this is a 4 or 5 star book because most recipes work, and are tasty enough as a base, although, like me you’ll probably find yourself scribbling all the book how to make the recipes better. On the other hand I could call this a 3 star book because the recipes, whereas they work, don’t come out as you would expect.Things like the Kung Pao Chicken, terriyaki chicken, or the Mongolian Beef for example; the recipes taste pretty good, but the taste is not even close to what you would expect with any other recipe for the same dish. So, if you want a book of decent recipes, I’ve found 85%+ of what I’ve tried with this book was good. (Which is better than most cookbooks I’ve tried)However, what you think you’re cooking might not be what you’re actually cooking. That’s the danger with instant pots because you can’t adjust the flavour as you cook, so you can’t fix to taste.

This is the best $12 i EVER spent on a cook book!!!!!
First my husband and I learned the hard way to only buy cook books authorized by instant pot and this one is. It truly makes a difference in the quality of the food that comes out of our instant pot. Add to that that this one is just chock full of helpful tips for using your instant pot, getting the most out of your instant pot, advance meal prep and clearly indicates which recipes are gluten free and dairy free, or can be modified to be so, as well as which recipes are freezer friendly AND they are healthier than most you find elsewhere. EVERY recipe we have tried so far has been easy to follow and has tasted absolutely delicious. I work 2 jobs Monday through Friday and LOVE this for prepping meals for the week as well as FRESH veggies and then we can get a delicious dinner on the table with very little time and effort. Hands down my favorite of my instant pot cook books!

Some is great, some is bland
We just started using the instant pot in my home so I ordered this book. Some of the recipes are great but some are pretty bland. The chicken fajitas and the recipe for the black beans could have used a lot more spices. If you are good with spice pairings this shouldn’t be a problem though! I was also bummed about how many of the recipes are for red meat since it is a health book I assumed there would be more poultry recipes. I’m sure we can sub in chicken or ground turkey for the red meat I just expected more veggie and chicken recipes I guess

A MUST HAVE cookbook for Instant Pot owners!
I bought an Instant Pot for quick meals, and I bought Healthy Meal Prep cookbook because I wanted HEALTHIER meals for my family. This cookbooknot only provides great recipes, it also lets you know the total time for prep, and cooking, gives tips on how to make it gluten free, and vegetarian( if you prefer it that way). It also provides how many servings, sodium, calories, carbs, fiber, and protein per serving. The recipes are by category: breakfast/brunch; grains, beans and vegetables;soups, stews and chilis; seafood and poultry mains; need and pork mains. With recipes like: Mango sticky brown rice, lemon- garlic shrimp scampi, salmon and vegetables with lemon- butter sauce, and balsamic chicken with vegetables and potatoes, this cookbook is a MUST HAVE if you have an Instant Pot!!

    Totally worth it
Love my Instant Pot, & this cookbook offers more good, easy recipes to make with it. I haven’t had this long, & have already made a large percentage of the recipes. I’ve enjoyed them. I also really like her suggestions for meal prep & planning. I can now bang out 2-4 recipes over a few hours on the weekend & my hubby and I enjoy a week’s worth of healthy, satisfying, more nourishing lunches & dinners for less money at home. (As an added bonus, my kitech stays clean & clutter free all week, & I feel less stress during the week knowing lunches & dinners are already planned & ready when we get home from work.)

Great Recipes and Tips – physical book has some problems.
Book has a lot of awesome tips and recipes. My SO and I have started doing meal prepping thanks to this book.My only gripe is with the physical book itself. A lot of the pages seemed to be mis printed and the text is very blurry. Images are of comparison to good vs bad page, and the picture does not do the bad page justice. While still able to be read, it is difficult for myself sometimes as I already have not so good eyesight even with glasses.

Very detailed recipes for the instant pot that appear to be healthy & nutritious. Excited to get going with making these!

I’m really enjoying this book.Pros:- Common ingredients: I have them in stock already or can easily buy in Australia.- Easy instructions: simple to follow, usually requiring a saute then a pressure cook.- Extra advice: tells you how to store things, what you can make ahead of time, sometimes has ingredient variation suggestions- Practical: included prep time and total time calculationsCons:- Mainly text: not many pictures, so if you need images of every recipe this book is not for you- Large portions: this may be obvious to some, but it’s meal prep focused so most recipes serve 6-8. I’ve been adapting the recipes to reduce for 2 serves (and just watching the liquid amounts to avoid the dreaded “food burn” error message).I liked this book enough I just bought a second copy to gift to my friend who bought an Insta t pot but is scared to try it. I think these recipes are tasty and the instructions are easy, so hopefully it will get her cooking.

I refer to this book all the time and have loved all the recipes I have tried, am working my way through the recipes. Good range of ideas timings are spot on.

I have a few IP books and some are better than others, bearing in mind most are written for the USA market.Although this is also non UK presenting, it is one of the better ones, meaning that there are very few ingredients that you will not find/already have in your kitchen.I think this stems from the author’s ‘clean’ eating approach (explained within the book) and this is helpful in keeping both nasty ingredients out but also eliminating hard to find (nasty) stuff. So, back to the old ‘meat and 2 veg’ approach in simplicity of ingredients but not bland by any means.I will be making most recipes in this book and it will happily become a much used recipe book. The author also gives pre-prep suggestions and batch booking advice. The only bit that worries me is the lack of advice (unless I missed it earlier in the narrative) regarding cooling foods before freezing. Although common sense for many, unless you know this, it may cause issues.
